for iftar yesterday
i decided to try and make a quintessential arab dish:
maklouba or “upside down”
maklouba - upside down

i kinda used a recipe:

but i added some extra veggies that needed to be cooked
so they wouldn’t go bad.

what makes it upside down
is that you put the meat in the bottom of the pot,
add vegetables,
then rice,
and cook;
and then when the rice is done
you are supposed to turn it upside down
on a pretty serving platter
– which i didn’t have –
and then devour.

it didn’t turn out too bad,
alHamdullilah,
if i might say so myself.
